I'm using a shuttle as a makeshift media pc, over WiFi, with MCE2005.

When playing video files, it stutters now and then. I've used WiFi in the past to play video files, and have seen the same thing.

Is there a way I can get MCE to buffer more of the video's so they don't stutter? Or anything similar?

The signal strength is very good, and as said I've seen these problems with wifi before so I don't think it's a network issue as such, more of an inherent problem with WiFi :p

I've always had similar with WiFI, just think it isn't really the ideal solution for anything that needs a smooth constant data stream such as media or online gaming.

Replaced my WiFi with a Homeplug system and problem solved, smooth consistent HD streaming with no packets ever lost and no cable to lay, plus i'm not giving my kids cancer with the WiFi any more!

If you are using a B or G network you will always have this problem, however N is apparently fast enough that no stuttering occurs.

Both b and g can stream video fine. Problems should only occur when the bitrate of the video exceeds either 11Mb/s or 54Mb/s respectivley, however interference and crap adaptors can lead to suttering problems.

Yes, you should be able to set up windows media player or vlc to stream the content to other pcs on the lan. They will automatically buffer when streaming.
