I have a new mesh system coming tmr.

I am wondering whether to start from scratch adding all devices as I go along and setting up IOT for smart devices is this a good practice.

Or

Name my new router the same net work name as now and password then everything will just work

I would just use the same SSID & password as you currently use, saves the time in reconnecting everything. That's unless you have a reason to want to start afresh (e.g. you've given the password to people you no longer want access, or you want to create seperate SSIDs for IOT devices etc)
