As in constant cooling?
I'd assume they'd also give you the best chance of getting a decent overclock on air over a random chip.
There are other high end cooling setups that aren't as extreme as LN2 that can be used for more sustainable extreme cooling though have gone out of fashion a bit like phase change/peltier setups.
Keep an eye out for the ASUS ROG Neptune graphics card when it comes out.
those chips are suppose to do the advertise speed under water, not ln2. on the box of my 4770K it says [email protected] 4c4t, that is what it does under ln2.
4.9ghz 1.3v air cooling (thermalright HR-02). i think mines needs a delid though as it creeps to 90c under full load. also got the cache running at 4.7ghz as well which is rare.
