Please spec me a new build for HTPC and desktop apps

I mainly use my PC for HTPC, internet and desktop office apps. Not too much interested in the latest hardcore gaming.

I have very recently upgraded my video card/monitor to

ATI Radeon HD6950
2 x Dell u2311h (Dual setup)


But the rest of my PC is pretty much rubbish/old.

Current PC

Abit AB9 Pro
Core 2 Duo E6600 2.4GHz
4gb RAM
500W PSU
75gb 10000rpm Westerm Digital
250gb Seagate Barracuda


So I am looking to upgarde those bits and pieces and also go to SSD.

Motherboard (dont really want to pay for one with all bells and whistles which Im never going to use (SLI, 10 x PCIe slots, 50 3.0 USB etc) but basic overclocking and a legacy PCI would be handy.)
RAM (8gb - is 16gb over kill?)
CPU (is the popular i5 2500k good enough, or should I go for something with a bit more juice)
SSD (2 drives, smaller one for OS and apps - roughly 100gig and a larger one for storage 300gb ish)
PSU (new PSU powerful enough)
Case
Standard CD/DVD Drive


In terms of budget, I dont really have a limit in mind but considering I already have GPU/Monitor I wouldnt want to go over £1000 for the rest unless it was necessary and the performace/price ratio was worth it.

I have this as a starting point. Im not sure whether to go with 16gb ram

I'd go with a 2500k.
All the CPU you need.

If quietness is a factor (if its in the lounge then a whirring PC will anonoy you!) then replace the stock case fans with a couple of these:
