Struggling to get a definitive answer from Google.

I currently have Plex installed on an old PC, with the media content held on an external HD.

Plex connects to my Now TV box.

I have just purchased a new PC, the old PC will no longer be used.

Would it just be a case of uninstalling Plex on the old machine, and installing on the new build while copying :

%USERPROFILE%\AppData\Local\Plex Media Server\ to the same place on the new computer ?

pretty much it. you just have to point plex to the right folder if it's not exactly the same (i moved the appdata folder to a hdd on mine and i've had no problems)
