I was using Juice, which is rather good - you can point it to any directory you like to store your mp3s. Personally I use MediaMonkey as my media player (it offers support for my Creative Zen MP3 player) and I just tell it to monitor the appropriate directory so new podcasts automagically appear in MediaMonkey for clicking and dragging to the player...
Try that out if you like, and I'm also trialling Doppler at the moment, which seems a bit more polished (in terms of its interface) than Juice and offers about the same level of functionality.
However, if you have an iPod I would stick with iTunes if I were you - after all, it does everything you need in one application, i.e. you don't need two or three to do the same job which the rest of us have to resort to.. I'm a bit jealous tbh (and desparately trying to justify the cost of an iPod right now lol)
It'll depend what podcast it is - some use MP3, some don't.
The one I use most is Juice - though the project's mostly dead now, but it works better than iTunes (for me), and I do have an Ipod.
