Pork Belly Squares...any ideas?!?

The way I cook pork belly is to slow roast it at ~110 for ~six hours, let it cool, then press between two roasting tins in the fridge overnight. Then I re-heat in a frying pan or flash roast whenever I want to eat it. This thins the fat and skin and makes a very quick but tasty meal.
 
love belly pork. slow roast of 180 for 1.5 hrs and grill the rind seperate for ultra crispyness. last time i cooked it with 5 spice powder and soy sauce marinade i grilled it on medium heat for about 15 mins each side and it was lovely. 3/4 kg joint that was.
 
How bad for me is pork belly? I cooked one the other day at it was seriously yum, but I guess that's because of the masses of fat in it... :(

Cooking it renders out a lot of the fat, however I won't pretend it's turkey :D.

If you do some exercise, I see no reason why pork belly can't form part of your balanced diet ;).

I'm just surprised that it's still classed as a cheap cut, what with restaurants using it a lot now and its extreme tastiness.
