Portal and other source games only using 1 core?

As title really.

I have an i5 760 running at 4.0GHz and using the core temp app, Portal and other source engine games are only using one core of my CPU even with multi core enabled and all cores ticked under affinity in the task manager. Any ideas?
 
Well I'm getting a slight hitch every 3 seconds or so. And reduced performance when I use vsync which I'm sure a 285GTX and a 4.0GHz i5 would be able to manage a stable 60fps in at all times in a source based game

What do you mean by hitch? FPS stutter? What exactly is the reduced performance do you get with VSync?

I've found all source engine games up to and including Portal 2 to run fine on my pc at the highest settings I can apply, with a significantly lower spec to yours (core 2 duo/HD4670). As Strife says you should be in great shape..

It'll often drop to 30fps when the action heats up when vsync is enabled as obviously thats the way vsync works.

Yes it seems like FSP stutter similar to the stutter in Fallout before the patch.

For what its worth I'm using 4xAA selected in the game menu and 16x AA.

EDIT: My GPU usuage is at 30% when playing source based games.
 
They do dual core, but i've never noticed any difference with it enabled.

In Portal it's: Options>Video>Advanced>Enable Multi-core rendering
