Possible to go back to last ios?

My iphone 11 recently updated itself to the latest ios. Its made a bit clunky , it was much slicker on the previous ios.

I have no intentions to upgrade as i mainly use it for whatsapp/ general browsing so its not worth it overall.

Why not try a reset? Back everything up first of course.

To answer your original question I found this;

Once you update to a newer version of iOS, Apple stops signing the older versions, which means that it is no longer possible to install them on your device.

This is done for security reasons, as older versions of iOS may contain vulnerabilities that have been fixed in more recent versions.
