So I've now got my new pc built and working, but other than plug everything thing in, I've not actually tinkered with any settings etc.

The build components are as follows:

Silverstone Fortress FT03, AMD A10-5800K , MSI HD 7850 OC 2048MB, 8GB RAM, Gigabyte F2A85XM-D3H AMD A85X

Is there anything I should really be doing, in order to get the best out of my new system?

What I'd like to do, is make it so that the gpu isn't used unless I'm playing games, and that the internal fans are only on when necessary (as they seem to be on all the time at the moment).

Any help would be greatly appreciated

I dont think you can disable the GPU like that unless you physically remove it. At Idle, I wouldn't have thought it would draw much power, so I dont think you need worry.

Regarding the case fans, you best bet would be a custom switch to switch them on/off or use a BitFenix Recon, which will allow you to put the RPM down to '0'.

If the GPU was not used you would have no display :)

What you can do is setup a customer overclock profile that downclocks the GPU when not gaming keeping it cooler, then bumps back up when gaming.

They pretty much do this anyway, with an idle clock (52Mhz) a 2d clock (50%) and a 3D clock (100%)
