Good idea for a thread? Give other devs here pointers, ideas as to how others format their CV's?

Yes I admit I'm looking to update mine, I'm thinking it could do with a complete refresh but need some inspiration instead of the generic templates I keep finding.

I use a tweaked version of the Modern CV latex template by Xavier Danaux.

I've received lots of compliments with that style.

Of course how you structure your CV depends entirely on what specific job you are applying for.

Personally just started making a simple html site that is an about me/CV. Thinking to have a nice page for the CV and make it all colourful, sort of an infographic with a few subtle animations.

Something similar to one of these maybe.

My advice would be, make sure your experience is tied too the role, make sure you have a few examples that backup your claims of being an expert in field X for example, and try to standout a bit.
