But if I buy premade cable I'm just running the cable along the wall as I go why would I need just cable? I do have a crimper but I won't be feeding cables though a 5mm hole. It'll be uncoiled until I reach end room which then has connector
If you can run a cable to/from where you need to without drilling a single hole then fine, but most people over that distance would need to drill a hole somewhere (especially if going inside >> outside >> inside) and @bledd 's point was it's a heck of a smaller, neater and more easily achieved hole without a connector on it. Making your physical routing choices to accommodate a connector is silly when it is so easy to crimp one on at the end but if that's no concern then no problem.
The underside of most carpets that aren’t foam/felt backed is hessian, it is hooked onto the teeth of the strip, you are very unlikely to damage it unless you have something with a sharp blade. The strip or bar is then screwed into the floor boards. To remove a flat headed screwdriver will lift the edge closest to the centre and from then it’s easily persuaded off the teeth. If you aren’t sure then 5 secconds looking at a photo of one should make it obvious.
