OK. So I have most of my stuff (just waiting on the memory now) and I started downloading drivers and such for when I reinstall Windows 7.

On the Gigabyte site (I have a 890FXA-UD5) it had drivers for AHCI and RAID that need to be installed before windows. Reading about a bit someone said that if you put it in AHCI mode in the BIOS then install windows 7 it doesn't matter as Windows 7 has the drivers on the disc. Is this true?

Most of what google comes up with is help for turning on AHCI after installing Windows. :/

Only thing I can add to SiriusB's comments is you want to then make sure you have the latest version of the disk controller's software installed after Windows is fully installed.
