I appologise in advance for asking such a noob question, but it's been years since I've built my own computer and I haven't bothered keeping up with it all since...

Just got a 1080p monitor (Asus VH222H) which has DVI, VGA and HDMI inputs, and an HD graphics card (Asus EAH4670) which has all 3 outputs...

If I install a blueray drive, do the card and monitor have to be connected via HDMI for full 1080 display or will the other connections do it?

They will all carry the 1080p signal with no issue. Only HDMI will take it with sound but as it's a monitor and not a TV I doubt that will bother you (assuming you have speakers).
