You've got the choice of either - though I'm not sure if the adapter lets you directly access the memory card so I don't know if you can only use it to copy the contents onto the PS3 or if you can use it as you would a normal memory card.
But for the simple option, you can create virtual PS1 and PS2 memory cards which are stored on the hard drive.
