after some research my list contains:

Metal Gear Solid 4
Unchartered: Drakes Fortune*
Soul Calibur 4*
Pure
Everybodies Golf: World Tour
Motorstorm: Pacific Rift
Gran Turismo 5: Prologue*

Any other 'console' only titles I may have missed?

* denotes titles I currently have

That's it until LBP comes out. Though I would recommend Bad Company for the MP.

I wouldn't class them as 'must play', as in 'you can't live without playing them' titles. Wipeout and SSHD are both good games, the latter especially. Warhawk is goddamn awful though. Thankfully Battlefield Bad Company arrived and showed what a proper MP battlefield game should be like.
 
Nokkon, does the ps3 version suffer with lag as bad as the 360 version?
will be getting a ps3 soon and if its not sorted on the 360 i was thinking of getting it on ps3.

Most of the time it's ok although sometimes I come across servers that are laggy. Normally quitting and joining another server sorts it out.
 
Is Soul Calibur 4 that good? Got it, played it for 5 mins - put it back. Am I doing it a dis-service? Coming from a Tekken 3 background...

Id say Ratchet and Clank - nice to have a good platformer...

Wipeout HD is a definite must own game...

I didn't find it a patch on the dreamcast game, I too bought it, played it once, put it on the shelf and it hasn't been touched since

Is it? Will it go down in the history books as a key game in any way? I doubt it, especially as it's not really done anything the past games didn't - It's a good game, but it's not a great game.

It's probably the best racing game on PS3 though.

Of Bad Company?
I've not had a single bit of lag on Bad Company on the Xbox360 due to it being on dedicated servers. It's about the only game on Xbox360 where I've not had lag mind :p.

Yep as it proves that 60fps 1080p gaming is possible and looks so beautiful at the same time. I definitely think thats a landmark for console gaming...

The games great, not good IMO and WELL worth the insignificant cost. Out of all the games Ive bought in the short space of time on PS3 this and FIFA 09 easily are the most played - MSG4 hasnt even been booted up :(...

Not really a landmark as there isn't a whole lot going on in-game. It looks beautiful in photo mode, but in game it's just another 'good' looking game, it lacks the wow factor of games like Project Gotham Racing or Gran Turismo for example.

You could remake pong and have it 1080p at 120fps if you wanted, it wouldn't make it a landmark :p.
