It's up now, no idea what it does, took 10 minutes just to get to 13%.

Looks like it's nothing more than a few fixes to the 2.00 update.

I dont know if this was present since previous versions but I've just noticed it now lets you stream videos your downloading off the PS Store. (Albeit not very well :p)

That is introduced with v2.00

I think the v2.01 is a fix for people experiencing disc errors with the PS3 not recognizing games and perhaps it fixes the slow XMB performance.
 
It's also sorted out a bug when transcoding media from PC to PS3.
2.0 caused films, music, etc to stop well before the end of the file, but it seems 2.1 has fixed that problem.
 
[Remote Start] feature is changed to avoid unintended power on.
Stability of System Software including Internet Browser and Information Board has been improved.
Stability during playing some PLAYSTATION 3 format software has been improved.
Stability of the upscaler for PlayStation 2 format software has been improved. (Playability of PlayStation 2 depends on model)

Well I can confirm the Transcoding Media Server issue has been fixed.
Props to Sony for sorting that so quickly, it was a major issue for me and many others.
