what wattage of psu would i be better getting?

i5 - 3570k
gigabyte ds3h intel z77 mother board
msi hd 7850
1th hard drive
128 ssd
zalman cnp5900 or a cnp511x cpu cooler
8 gb ram

could i get away with less than 700w?

500w would be fine with a single gpu in your system.

Make sure you go with XFX, Corsair, Antec or BeQuiet brands.
