I currently have the Gigabyte DS3 motherboard along with an E6300, 2GB RAM, 1 fan and an arctic cooler 7 CPU fan. My current PSU is a 430W Antec that came with the case when I bought it a couple of years ago. I want to upgrade my graphics card to a 4850 (currently it's a 7900GS) and I'm wondering if this PSU would be enough or I'd be better off getting a better one?

it should be enough but youd be better off getting a new oone any way, say a corsair 520w

Why? So long as his PSU has the required PCI-E connections theres no reason to get a new PSU, as you said his antec should be fine, so why spend money for the sake of it? You will however need a new one if at a later date you decide to add a 2nd card in crossfire

It is more than enough. Is that a smartpower/earthwatts 430w psu? They are very good psus. The rig in my siggy draws a peak of 274w from the wall so the actual pc only draws around 240-250w. No need to replace it.

Not much future proofing in that PSU, the card should be OK on it, google for some reviews or perhaps someone can tell you how much ATI recommends.

But yes, you'll need to upgrade the PSU in the future at some point. As said above, modular Corsair PSUs are fantastic. I use the HX 620, which also supports SLI / Crossfire. Check their range out at some point.

Well from what I've read ATI recommends about 450W for that card, and then about 550W for Crossfire. I wasn't really looking at doing crossfire. In order to do that I'd need a new case, motherboard, everything essentially which I don't particularly want to do right now.

The 4850 should run fine with your 430w PSU (as its not a unbranded cheapo one), the only real reason to upgrade is if you want to future proof it for xfire/sli or dual gpu cards.
