what can i be looking to get out this chip ?

Depending on the board, I'd be hoping to get about 3.4GHZ+ if possible.
AsRock webpage says:
Supports Dual Channel DDR3 1333(OC)
So it means you have to do o/c, otherwise Auto setting will always set memory up to 1066 MHz.
Regarding to improvements over G31:
Supports FSB1333/1066/800/533 MHz
.. which gives you rather poor chance to achieve higher FSB speed. You can only try yourself![]()
I had my q8400 at 3.1 on asrock g31m
Ran too hot for anything higher, just upgraded to an i5 3570k and happy enough.
Generally for overclocking Core2duo CPUs, the 31 and 41 chipset boards ain't too bad, but they are definitely no good for overclocking Core2Quad CPUs. As a thumb of rules, generally you should have a P35 or P45 chipset board if you want to get a decent overclock on a Core2Quad..
With that said, since the Q8xxx Core2Quad are locked with a x7 multiplier, realistically you would expect it to go much further than 3.2GHz even on the good boards, and for 31 or 41 chipset boards, I think the realistic target is 3.0GHz and that's it.
