Question about a card upgrade

Hi everyone.

I love PC gaming and fast rigs, but I learned the hard a couple years back when I built my first powerhouse that I hate having to actually learn or worry about anything to do with how they actually work. So here I am to ask the experts this time around for some advise.

I figured I'd splash out a bit and upgrade my current rig as I'm not quite getting the ideal 1200P 60FPS with medium to max I'd like in some of the newer games. I'm hoping that all I'll need to do is upgrade the GPU, but what I'm wondering is if I'll hit any bottle necks anywhere else with my system if I do, and if I'd maybe be better off going for something not quite so top end as a result and look at starting again in the future (this time, paying someone to build it for me, heh).

I've not decided on a new card yet, I have no loyalties towards the green or red camp, but I think I'd prefer to stick to a single card rather than brave a duel set up. I have no future plans to move to a Triple head set up either.

Anyway, this is what I have right now:

GPU - AMD XFX 5870 1GB

CPU - Intel i7 930 2.8GHz Socket 1366 8MB L3 Cache

PSU- Enermax Revolution 850W PSU

HD - Samsung HD103SJ Spinpoint F3 1TB Hard Drive SATAII 7200rpm 32MB Cache

Mobo- Gigabyte GA-X58A-UD5 Intel X58 Socket

RAM - Corsair 6GB (3x2GB) DDR3 1600MHz XMS3 Dominator

Any single high end card will be fine in that system, 7950/7970 from amd or gtx 670/680 if you prefer nvidia. The 7950 represents the best value of them all though.
 
Okay, you think I'll see a fairly massive boost from this upgrade? For example on Tomb Raider now I get around 30-40 FPS with things around the medium level at 1200P, I'd like that to be fixed at 60 at maybe max (minus the fancy hair tech).

This is all mostly so I can wipe the floor with the new BioShock when I get it, a game that amazing needs to be experienced at its max.
