I have just swapped my ThinkPad for a late spec 2011 17" MacBook Pro, I am looking to upgrade the RAM to 16GB. Is there any reason I can't use RAM that runs at 1.5V? Does it need to be 1333MHz or can I use something like this:-

Vengeance Performance Memory Kit 16GB (2x8GB) DDR3 (SO-DIMM) 1600MHz CL10

You can use 1.35V or 1.5V. You can use faster memory but it will just be underclocked to 1333MHz, and run at the stock (looser) timings.

I'd look for 1333MHz memory with tighter timings and/or lower voltages, just to be on the safe side. However, you can easily just go with whatever is the cheapest.

You could use 1600MHz but it will only run at 1333MHz anyway. You also don't want sticks with heat spreaders. Not 100% on the voltage but I would personally go with 1.35v to be on the safe side.

EDIT: Beaten to it :)
