Ok. If building new then you have to go either AMD AM3 or Intel i7/i5 which means you have to get DDR3 memory sticks. AM3 & i5 both still run in dual-channel mode (i.e. 2 sticks at a time). Can't say which one's to go for exactly i.e. make or speed therefore its better to wait for an expert on that to respond. Also, matters if you plan to OC?
for gaming it makes very little difference at all, only really effects benchmarks, and then its a sweetspot, theres no use having high bandwidth and high latency but equally no use having low of both either, a compromise is best
DDR3 should be generally faster than DDR2. It's newer tech and the higher bandwidth should make up for the higher latencys. Doubt you would notice a difference though as 95thrifles says.
One thing to maybe bare in mind is future prices in case you want to drop more memory in later. DDR3 is still dropping in price while DDR2 will get more expensive as production volumes drop.
