Quick dynamic range question

OK, if my Nikon D5100 supposedly has about 5 stops of dynamic range at ISO 100, does that mean I have 5 stops of dynamic range above and below the original exposure, or 2.5 stops either way?
 
2.5 stops either way. Most of your dynamic range will be in the shadows though, not the highlights.

You may be able to comfortably recover 1.5-2 stops in highlight detail, and 3 (maybe 4 with some added grain) in shadow detail.
