When using "-" to seperate product types on a page top description would the next item be capitalised?

Is it :

Some products we cover - Servos - Mixed crystals to 6" - All size drop gears - All size manifold tooling - Star pumps - Many types of connectors - Various sized cable & caps etc.

or

Some products we cover - Servos - Mixed Crystals To 6" - All Size Drop Gears - All Size Manifold Tooling - Star Pumps - Many Types Of Connectors - Various Sized Cable & Caps etc.

or

Some products we cover - servos - mixed crystals to 6" - all size drop gears - all size manifold tooling - star pumps - many types of connectors - various sized cable & caps etc.

1st or 3rd, I'm not sure there are specific rules in this scenario.

Given that you're not starting a new sentence it shouldn't need a capitalisation. The first one does look better, but I think the third has the best syntax given that they're items not brands.
