I'm going from a full sized drive to a slimline one to free up a bit more space for a better cooler, but I was just wondering if it's as easy as just sliding it in and fitting the screws?

nope. The fittings between a slimline optical and full size are completely different. You'll probably have to do some modding. On second thoughts, it might fit, but would need some padding out most likely as I think they are slightly thinner.

An installation manual is available at http://www.in-win.com.tw/manual/4RAMEE003600.pdf. There is a special cage for a slimline OD and a card reader. As the cage appears to have the same height as one for the full size OD, you are unlikely to have more space for a better cooler. After looking at and trying various mini ITX cases most people usually discover that the only ones that are worth using are the Sugo SG05/SG06.

Note that the mounting screws are of different size compared to full sized optical/hard drives. I got an OEM slimline drive from OcUK and they didn't come with screws. Also, if you buy an IDE one, watch that get a converter to attach it to your mobo (it is also sold in OcUK somewhere. When I put the drive into the cage, it was a pretty tight fit, so mine's in there without any screws.

Looking further into it, if I connect up the slimline using the bracket included with the case, it should free up some room for a slightly bigger cooler.
Thanks for the heads up on the screws though, I'll have to make sure I have some that'll do the job.
