my mother boards GA-7NNXP a gigabyte board using the nf2 400 chip set

which would you go for out of the two, im trying to decided weather it would be a bad thing have 500 mhz ram in there with slighty slower timmings than 400 mhz ram with faster timmings

i was looking at the 2gb kits from mushkin theres green stuff at 400mhz Latency: 3-3-3-8 or black stuff at 500mhz Latency: 3-4-3-8

i would have just gone green but its out of stock and blacks on offer for an extra 12 quid

its for a 2500 cheapo barton but i wanna help the system along a bit and clock it to 3200 to prolong its life a little bit

If you're running a barton 2500 at 3200 speeds you'll be running it at 200x11. So you'll want the modules that will run the tightest timings at 200Mhz, don't bother with higher rated 250Mhz (500Mhz DDR) modules as you won't be able to run your RAM at those speeds.

The GSkill ZX is a very good choice, the 2-3-2-6 timings will be great on a socket A system, as tight CAS latency is a must. If you can't afford them, then Geil Value is good and will run 2.5-3-3-6 despite their timings being actually rated as much slacker.
