Running a 8800 GTS in this would be fine?

MSI 975X Platinum PowerUP Edition (Socket 775) PCI-Express DDR2 Motherboard

Would this just mean i cannot run a nvidia dual card setup correct?

The graphics card will be fine running with that motherboard, as you suspect though you cannot run a dual graphics card setup from Nvidia (SLi) because the motherboard supports Crossfire only for dual graphics cards but a single graphics card from any manufacturer will work fine. :)
