quick question

Either, just as long as you describe the car's ownership properly on the insurance.

Get a quote for you being the registered keeper and not being the registered keeper and see if will cost you money or save you money depending how you do it.

My dad is giving me a his old runabout for a year and I need to insure it. Do I need to change owners or can I leave it in his name or do we need to change it to my car?

The term is actually 'registered keeper', from a legal point of view is doesn't have a effect on the legal ownership of a vehicle.

Many insurers don't like to cover cars if you're not the registered keeper (I suspect they're concerned about fronting).
