Would you rather use:

Laptop a) i5, 16gb ram
or
Laptop b) i7, 8gb ram

For general day-to-day use, image editing and a bit of video editing

Missed the point of the question

Not really. Laptop B is going to be the better laptop because you will be doing video and photo editing on it in addition to every day use.

It is a better specced machine full stop, so not only will it perform better on a day to day basis, it will also out perform the i5 machine for video and photo editing.

EDIT - have you ninja editied the RAM specs?

Pretty sure they were the other way around when I replied???

No ninja edit! Obviously laptop B would have been superior in every way otherwise. I wanted to know whether CPU or RAM was more important.

It's 50/50 in all honesty. It wouldn't hurt to have 16Gb when editing but that could come later if you find the i7 struggling on its own.

SSD would be a nice addition too!

LOL, then I am going mad and you are indeed right I missed the point entirely :p

OK, well RAM wise, more is good for video editing, however I think 8GB coupled with an I7 would have the edge over the i5 with 16GB.

In day to day use, 16GB RAM is pointless, but an I7 isn't.

So I would go with option B.
