Any opinions on a GTX 275, quality and noise levels would be my main requirements?

Can you change fan speed on these when idle?

Thinking about the Asus at the moment.

Thanks, had trouble with the 4870 therefore going down the NVIDIA route.

Quick Q: My PSU (Enermax 625 Modu82) is rated for two 12v@25A PCIe connectors (300W each, athough I image the 600W total is also shared with the motherboard 12V power).

So a single PCIe cable should cover the GTX 275's 219W power requirement.

Am I better off connecting both PCIe cables to the PSU, and using 1 connector from each into the graphics card?

Yea do what your thinking on the power front bud!! I have the 275 in sli and they are awesome cards, you can download EVGA precision for a little overclocking and there is the fan speed setting on there to so its win win for you. You can tweak to your hearts content. My cards are XFX and the EVGA software works fine. Hope this helps.
