I'm thinking probably not, was considering 3900 or 5800x.

It depends. Might as well wait for AMD's V-Cache CPUs in Q1 2022 now.
5600X would give you a good kick, depending if your mobo supports it ofc.
5800x would be a good upgrade, especially after the price drop they've just had.
It's looking like the best option, I fancied 12 cores with the 3900 series, but really am I ever going to utilise 12 cores for gaming during it's lifespan? (3-5 years I guess)
5800x is much better for gaming as it has lower latency and higher clock speeds. Unless you're using it for work, the 3900 will be the worse option.
