It's not in season at the moment so don't expect to get a wild one. Beware the farmed ones though. If your butcher can't tell you where it came from, chances are it came from France, and the farming conditions aren't very good. I'd prefer to wait until autumn for mine and get it from a farm shop. They usually have them fully prepared and ready to use or freeze, so you can stock up. Ask them where they came from and they'll usually say something like 'we shot them in that field over there'
I know you can get them year-round in Borough Market if you're in or near London.
