I'm right in thinking these are just momentary switches right? So when the buttons pushed the green wire on the motherboard plug is shown a connected circuit with ground and powers up. Showing it this connection again tells it to shutdown, holding this connection forces a hard-off?

If so... is there anything stopping me connecting multiple switches to the same motherboard header? (I'd think not) and is there anything stopping me connecting 1 switch to 2 motherboards? (I'd also think not).

Nothing should theoretically stop you to wire them in parallel. As you probably know you can operate the pins on the motherboard that are responsible for power on and reset with a screwdriver so this should be enough said. :) All the switches do is close the circuit and then the low level software of the motherboard figures out how to interpret this.
