Really worth the 2600k?

I do do a fair bit of video editing but considering the 2600k would be a fair amount over budget are the extra 4 threads really worth it?

Depends how much time you waste currently waiting for renders really. In multi-threaded apps the HT give a good performance increase.

considering there is double the cores does that mean it will render in half the time?

It has double the threads, not double the cores. Typically you'll see HT gives anywhere between a 20-40% improvement when you use all the extra threads.
