So if I select the option to blank the server screen while a viewer is connected (i.e. I connect to my home PC (server) via my laptop (viewer) the viewer also displays a blank screen (black screen).

Any ideas why this is happening?

Slightly off-topic but I switched from VNC to teamviewer a while ago which is free too. Seems to work much nicer and will work behind firewalls too - it provides the blank screen thing you want as well.

Could try changing the update hook.

This would either be because you've selected the "Blank server screen whilst connected" option, or be a conflict between the VNC Mirror Driver and something like Windows Media center (3d/intense content) when hardware acceleration is set to high.
