Recipes for those without an oven

Hi!

I have hobs (electric not gas :() and a microwave....frying pan and pans oh and a woc.

I'm wanting to start cooking more but i'm struggling to think of any cheapish quick recipes.

All I can really think of is boring things like omelettes etc.

I'm trying to compile myself a mini cookbook with around 15/20 quick cheap and easy meals to cook!

Help ocuknobi you're my only hope!


edit: I'm a pretty terrible cook, the only thing I can cook well is a fillet steak :p

Stir fry's are cheap Sainsbury's do a basics for £1, Morrisons used to do the same but they discontinued may be a local thing you get enough vegetables for 2 or 3 for your £1. Most of the supermarket's do a mushroom, Chinese or pepper for ~£1.50 but it's much smaller than the basics. I use chicken for the meat, veg stir fry is good as well, I keep a supply of hot pepper sauce, soy sauce & fish sauce and use these to my taste. Also I use rapeseed oil for frying.

So dice the chicken in to bite size to two bite size pieces and cook in about 15ml of oil in your wok at high heat for 8 mins turning once, then add the veg and cook for 2 mins, add the sauces to your taste and cook for a max of 1 min. Adjust the sauces each time you cook this and you will soon be able to knock up a tasty stir fry in no time and it's healthy too.

Edited.. stir of flip the veg ~every 30 seconds and if cooking for more than one use more oil.

Something simple (but unhealthy) is to basically get meat + cheese + some veg, roll it up in a wrap and then put that in a pan (without any oil) and cook it on a low heat on both sides for ten mins or so. You'll end up with nicely crispy wrap with lots of lovely melted cheese :)
 
Why not make yourself some spiced vegetable soup? Do you have a hand blender or could you procure one?

For the two of us, for evening meal, plus lunch the next day...

Throw an onion and a couple of cloves of garlic into pan, fry them off for a few mins, then add in some veg, anything you want really, I often use carrots, sweet potato/butternut squash, parsnip, courgette, celery, broccoli - and usually a potato, just one, to thicken it up a little...
Then put in a tin of tomatoes, some mixed herbs, salt and pepper, about half a chilli (or a bit of chilli powder if you don't have fresh chilli) and about a pint of vegetable stock.

Leave for about half an hour until all the veg is soft, then blend it. How chunky/smooth you have it is up to you really.

Yum, tasty, healthy and good for lunches etc.
 
Could you add a raised platform onto the bottom of the pan (a cooling rack, perhaps) and then put the lid on to create a sort of oven?
 
My wok is probably my most used kitchen item. It's big enough that I can make stir-fries, curries, stews, risottos, jambalayas... well, pretty much anything you'd normally make in a wok, frying pan or large pot. Had it for a decade now. You can do a stir-fry in a few minutes, or a stew in a few hours, and everything inbetween. Plus, you can make enough that you can have loads of portions, have it for lunch the next day, freeze it...

In fact, if my house was burning down... it would be the one thing I'd retrieve from the glowing embers the following day. :p
 
If you like stir fries you should invest in a large cast iron frying pan, once it's seasoned and used a few times it's 10x better than a wok. I got mine from a camping shop delivered for ~£16.
