Recommend me a cold buffet dish

Hi all. I'm going to an event tomorrow with around 12 people where everyone will "bring a plate" for lunch.

The food will be served as part of a cold buffet and the other people will be more-or-less strangers. None of the group have any particular allergies, however half of them will be pregnant so no unpasteurised diary, shell fish etc.

I thought about making a pasta salad of some sort, but I've never actually prepared a dish in this environment before so I would welcome some suggestions / recipes :)

Get some nice tortilla chips (so not Doritos) and stick a bit of chorizo and Manchego cheese on each, sundried tomato and manchego for the veggies. Easy peasy but a bit different because I bet everyone will bring pasta salad. :p
 
You could do an easy version of curried rice and mackerel (also known as kedgeree!). It's a really nice cold/picnic dish, although lovely hot too. I'm actually cooking it now so I'll post a quick rundown. This is for two people so multiply everything accordingly.

- Slowly fry up an onion or 2 shallots in olive oil in a big casserole dish
- Add a knob of butter and turn the heat up a bit
- Add 1tsp garam masala, 1/2tsp ground cumin, 1/2tsp turmeric
- Let the spices cook out and meanwhile wash 2 cups of basmatic rice
- Add the washed rice into the pan and stir to coat with the spices
- Add 3 cups (1.5 times rice amount) to the dish and stir well
- Add some instant stock if you want, but go easy you won't want much
- Add some peas, turn up the heat to get it boiling
- Once boiling turn right down and cover
- Whilst your rice is cooking, hardboil two eggs and flake your smoked mackerel
- Once the rice is cooked cover it with a clean cloth (lid on top) and let it suck up the steam for 5-10mins
- Fluff the rice and let it sit for another 5-10mins (covered with the cloth)
- Peel and slice your boiled eggs lengthwise into quarters
- Gently mix your mackerel into the rice with a splash of lemon juice and some chopped coriander
- Serve and top the eggs

EDIT: Obviously to make it a cold dish I'd cook as above, but leave out the fish. Mix the mackerel in when the rice has completely cooled. I've taken that on picnics a few times and it's gorgeous.

Cocktail sausages!

Pasta Salad isn't bad though. I used to have an Apple and Walnut one that was amazing. Unfortunately I can't remember what sauce I used to put with it :S May have just been Mayo, or may have been something more elaborate...

Cocktail sausages!

Not good enough!

Cocktail sausages, cut into little segments. Also get some chedder cut into small cubes, a jar of pickled onions and a jar of cocktail sticks.

Stick through each stick 1 pickled onion, one cube of chedder, 1 cocktail sausage segment. If your feeling generous also chop up some pineapple and add on a small chunk of that at the end. Repeat till you have enough for everyone attending.

Very morish :D
