Yep, +1 on that. Pan fried steak, just cook to how you like it. 2 - 3 minutes either side if you like it medium rare, increase each side by a minute to suit how you like it, but do not cook it too long, ruins the flavour.
Take the steak out the fridge about an hour before cooking, when cooked, place in foil for 2 - 3 minutes to allow the juices to run back in, lovely..
Chips are easy, perhaps a few peas, or onion rings. Pour the streak juices from the foil onto the steak before serving. I like to rub some black pepper and salt into my steak before cooking, season to taste really.
