In XP (will not be in Vista and you install XP 1st to dual boot anyhow)
In "System Props" (Right Click My Comp), go to "Advanced Tab", then to "Startup & Recovery", you can then EDIT the Boot.ini to get rid of the Vista Lines of text.
You will not see the option to choose Vista the next time you Restart (if you do it properly).
A good idea is to backup the Boot.in into a .txt file and Archive it before you dual boot, then simply copy/paste it back completely and no need to worry if done right.
(I'm doing this from memory, on Vista and its not there infact they don't allow you to do anything like that by normal methods for security reasons).
