Removing photos from iPhone

So previously on windows I used to periodically remove my photos from my iPhone and back them up simply by dragging the files off the phone. How the hell do I do that now with a Mac? If I connect my phone I get the option to import into photos app, I tried that then it started uploading them to iCloud. I do not want to use iCloud for my photo back up.

How do I explore the files and drag them off like I did with windows?
 
Yes, you can just drag them out of Photos or use the export utility, then copy them wherever you want.

Thanks, that's the issue I'm having. Usually I'd use explorer and drag the files out. Using finder I can see the phone but how do you explore the files to see them individually to drag them out? I hope that makes sense?

I go finder. Then location is iPhone and then I see the back up window kinda like I used to see in iTunes on windows, but no where to explore the files to drag and drop.

Sorry new to all this Mac OS :)
