Replacement tyres - knobbly to road - and sizing

Hi all, I need a bit of tyre advice and knowledge.

Finally got our bikes back from storage (a freind's garage) where they've been since we moved a few years ago. My wife's got a hybrid/town bike but mine was more used to riding trails/fields in the Hampshire countryside and therefore has very knobbly tyres. We'd like to get out riding now with our kids and it'll mostly be on paved or light trails so I'm after something with a much more suitable tread and lower rolling resistance.

Sizing on the current tyres says (53-599) 26 1.95. Am I stuck with that size or can I go down to something like a 1.75 instead? And what sort of tread would be best? Any recommendations gratefully received. Thanks
