Replacing Lenovo tiny computer running single SSD with an ITX dual M.2 NVME NAS?

I currently have a Lenovo M73 Tiny running OpenMediaVault on a little USB memory drive with a single 2.5" 1TB SSD. Whilst I am OK for capacity I am restricted to just one SSD within the Lenovo. I've been thinking about "upgrading" my very basic home NAS to an ITX motherboard with a 2.5GbE port, two M.2 NVME slots and a much more modern CPU with a nice big cooler storing all this in a small case with a silent fan.

So far I've shortlisted the Kolink Satellite case, Gigabyte B760I Aorus Pro DDR4 mITX motherboard, Intel i3-12100 (for onboard graphics so I don't have to clutter case with even a basic GPU), 16GB of DDR4 RAM, a Noctua NH-U12s or NH-D15S, a Kolink 500W modular ATX PSU (more wattage than I need but its entirely modular which helps limit cable clutter) then two Kingston KC3000 2TB or 4TB. I believe I can get OMV to RAID the NVMEs for me so I was thinking a RAID1 array to give me either 2TB or 4TB of usable space depending on which capacity NVMEs I go for. I would then get a 4TB 2.5" SSD and a 4TB 3.5" HDD in caddies to give me the ability to backup the NAS contents to different storage mediums. I have a spare 2.5" SSD that I could use to install OMV to in place of the USB memory drive if that proves to be a bottleneck.

I also have an increasing number of computers with 2.5GbE ports so my plan would be to get this NAS built and then get a 2.5GbE switch to create a physical sub-network for my 2.5GbE able devices. The Kingston KC3000 are PCIe 4.0 x4 so should easily saturate a 2.5GbE link? I realise there are other options for doing a basic home NAS but in terms of upgrading from my single SSD situation and not needing more than 4TB usuable NAS space, is there anything wrong with my spec in terms of it actually working? I would like to keep the NAS as small as reasonably possible but in a case that lets me have a nice big cooler! Whilst there are smaller ITX cases out there than the Kolink Satellite they really restrict me on the height of the CPU cooler. Most of the cases seem to have space for just a single 120mm intake or exhaust fan hence thinking of using a big CPU cooler to help bring air into the case to keep the SSDs as cool as possible.

Any obvious flaws I've made in what hardware I've shortlisted?
 
I personally like the look of the fractal node 304 better. Slight bigger depth wise but more hdd slot space, front and rear fans to flow through the entire setup which may cool the overall setup better and reduce the need for a massive cpu cooler.

I’m personally not so much bothered about network speed yet, but have been looking at the qnap quad m.2 expansion cards as a means to expand via nvme rather than sata long term.
