Sounds like the inner and outer CV joints are shot on the wife's Yaris.

Instead of chasing a potential of 4 CV joints, it's going to make more sense just to replace the lot.

Upon replacing both driveshafts, are there any seals etc that would need doing at the same time?

I assume gearbox oil will be required too..?

Normally its just a undo and pull out jobby no extra parts except the transmission fluid.
I would check the ball joints at the same time and head to machine mart and by a gearbox drain adaptor set, dont use the cheap cast iron sets as they just snap on thebuggers.

I did this recently on Kate's Golf - it was cheaper and less effort to fit an exchange driveshaft so I just swapped the whole unit.

It's a good idea to replace driveshaft oil seals at the same time. The shaft should come with a new nut anyway.

Doubt that the inner ones are gone. If its clicking on full lock then it will be one of the outer ones. As said above best to replace the seals at the same time and yes you will need oil. You wont need any special drain tools its just a 24mm plug. You will need a 30mm 12 sided socket for the drive shaft nut though.
