Reset xbox to factory settings

Hi guys, I am trying to clear out my xbox completely. I have formatted the HD so the immidiate settings etc have been reset, but it still has the updates (i.e. new dashboard) on it. How can I make my xbox forget EVERYTHING? Its an old style one. I think it was an arcade which came with a 4GB memory card, if it helps.

You can't delete the software updates.

The dashboard will be stored in ROM somewhere, they won't make it easy to modify due to the potential for modding.
