Guys

Was the UK version of Resident Evil 4 censored on the Nintendo Wii

I don't know. Give me an example of something that would have been sensored.

a few sites say that

"...a great portion of the blood and gore has been excised from the game. Headshots no longer kill, limbs can no longer be shot off"

but then a few sites say it's not anyone with the game that can confirm if it's been cut as in the cube version the game was not censored

No only the Japanese version was censored.

Heads explode quite nicely after a few shots.

Well then I'd say it's not censored.

I blasted a great many heads clean off, resulting in a good deal of blood, whilst playing through the game.
