response time?

Not really in my experience, unless your a die hard fps find and play with very sensitive mouse settings.

My last monitor was 5ms with a virtual 2ms mode that didn't really work (using it in 2ms mode had detrimental effect in other areas) so I left it as 5ms. My new monitor is 2ms native and does feel better for fps, but it's also 5 inches bigger, and higher resolution, so there may be some placebo effect there.

I wouldn't be too concerned between 2 and 5.
2 and 8/10 maybe.
 
There are a lot of factors to consider in terms of an LCD panel's reponsiveness that go far beyond the value they give. The input lag, response time compensation algorithm, ISO response time (the 'old' response time measurement that is still quoted for some models) and screen refresh rate to name but a few. You have to be sure you know what you're actually looking at, as some manufacturers (such as Samsung and BenQ) quote the Grey-to-grey response time for some models and ISO for others and these figures are not directly comparable.
 
yes, i'd be a little bit careful with looking at a 5ms vs 2ms response time just purely on paper. If you're looking at TN Film models, the 5ms is a non-overdriven response time, whereas the 2ms is G2G and uses overdrive. Have a read here which explains it more :)
