Restoring jailbroken iPhone 4S 5.0.1

I've sold my Jailbroken 4S but I'm trying to wipe it with not having much success. I've tried grabbing the SHSH files then stitching them to both 5.0.1 and 5.1.1 firmwares using redsn0w then trying to restore but it's giving me an error.

I just want to wipe the thing without having to upgrade to 6.0, which is what the buyer wants. Is this possible?

Right ok. Then do you know a way of clearing all my settings, apps etc without restoring? Is there a cydia app that will do this?
