Does the home edition have all versions on the stick? So if I were to buy a separate key (pro, enterprise or whatever) I could just use the home version?

It's more than likely be key based so ...
If you have a Windows 11 USB stick with a Windows 11 Pro key it will install Windows 11 Pro.
If you have a Windows 11 USB stick with a Windows 11 Home key it will install Windows 11 Home.
If it doesn't then it's a matter of just making your own, all editions are included when you make your own.
If you have a Windows 11 USB stick with a Windows 11 Pro key it will install Windows 11 Pro.

Depends what the actual installation media is but if you download the latest media it will install whatever version is appropriate for the key, except for enterprise editions which are distributed differently.
You may find some older (probably more applicable to Windows 10) retail media has a more limited range of versions on it.
