Rice recipes?

Been wanting to cook up my own chicken fried rice instead of getting the un-healthy greasy option from the take away. So does anyone have any decent recipes?

Any rice recipes would be appreciated as I like the stuff and its easy to cook and use for lunches and to nibble on as a snack :)

Cook up some rice, I think steaming it works the best for fried rice and once cooked cover it with cling film and stick it in the fridge for a few hours, preferably overnight.
Then when you want to do the fried rice heat up a wok very hot with some unflavoured oil and break an egg or two (depending on how much rice you're doing) into the hot wok and scramble quickly.
Remove the egg from the wok and cut into strips.
Now add some more oil to the wok and put in your rice with a clove of crushed garlic and cook for 5 minutes or so.
I then add a splash of light soy sauce at this stage.
Add your chicken (pre-cooked chicken thighs work really well) and cook for another couple of minutes. I should point out that only pre-cooked chicken is added to the rice.
Once chicken is hot through add in some sliced spring onions and a handful of peas and cook for another couple of minutes.
At the end add a good splash of toasted sesame oil and stir through the rice.
Serve.
 
This is what I do and it tastes amazing.

Boil some rice, rice has to be absolutely spot on cooked, not a second to much boiling or its ruined.

Once boiled, let it cool, then wash the rice with cold water. Now, wash it again then drain it and leave it aside.
Now I make the mix which consists of a good glug of soya sauce, a splash of sesame seed oil, a couple of eggs, salt + pepper, stir it like a mad man and put it aside (as an extra I always use a splash of fish sauce too)

Now to get your wok, it needs a tablespoon or two of some decent oil. Get it VERY hot, once it's as hot as it'll go get your rice in and keep moving the rice about constantly, once the rice is up to temperature with the pan make a pit in the middle of the rice and pour in half your mix, give it a few seconds for the egg to set then start to fold in the rice, but keep moving it. Few mins later add the rest of the egg mix doing the same as before.

(Obviously add chicken pieces to the mixture for chicken fried rice :))
 
Try this for an exceptionally easy but very tasty rice dish:

Finely chopped onion lightly fried in a wok for a couple of mins , add frozen peas another couple of mins add a tin of sweetcorn. (finely chopped peppers and spring onions also work well) Mushrooms if you want em.

At this point shove a bag of microwave long grain rice on (the asda own brand 500g bags are the best I have tried but any will do) for 30 seconds less than the package says.

When the rice pings pop it in the wok with your veg stir add soy sauce to taste and cook for amother min or 2. (a whisked egg or 2 can easily be added at this point simply stir it in and will cook in the rice mixture in no time at all.)

Adding to this to make it a full meal is easy, pre cooked meats (chicken, hot dogs, gammon steak, prawns etc) of any sort can be chopped and added just after the onions have softened a bit.

From the above basic recipe throw in cajun spices and leave out the egg and soy sauce and the dish is Jambalaya. (or simply try the above with a jar of Cajun sauce mixed in without the soy sauce or egg).

Plenty of people will poo poo the idea of using microwave rice pouches but I think they are truely excellant and one of the few things where the micowave excels producing perfect results every time.
 
West Indian Rice & peas
serves 4 adults

1 medium sized can red kidney beans
1 can coconut milk
2 cups of rice (i use easy cook long grain)
1 small onion, chopped
1 clove garlic, chopped
1/4 teaspoon dried thyme (or a pinch)
1 table spoon oil
1 scotch bonnet pepper (whole, do not chop up)
4 cups of liquid (total amount inc. coconut milk and drained kidney bean juice)

Drain the liquid from the can of beans into a measuring cup and add the can of coconut milk and enough water to make four cups of liquid. Place liquids in a pot with beans, onions, garlic, thyme and oil, bring to a boil. Add rice and stir for a minute. Bring back to boil. Reduce heat to Low. Place scotch bonnet pepper on top of liquid and cover for 30 minutes. Remove scotch bonnet pepper before serving.

Remove lid and let sit for around 20-30 mins before serving, giving it a stir every 10 mins.

i cook this regulary when i have curried mutton/goat, this is tried and tested and YUMMY
its also ace by itself :)
